PROJECT DESCRIPTION

The production of sugar used to be one of the most important activities in the Mexican industry. Nowadays, the production is decreasing due to the recent introduction of high fructose syrup. We expect to build a system where enzymes involved in transformation of sucrose into fructose can be linked to membrane proteins on Escherichia coli. This system could be used, if applied, to produce high fructose syrups from sugarcane, addressing a new way to improve the sales of Mexican sugar; and also as an alternative to the conventional immobilization of enzymes in industry.
